Baked Sunday Mornings: Lemon Pistachio Cornmeal Muffins



After missing a couple Sundays, then having somewhat of a recipe fail last week with the banana fritters, I was happy to see Lemon Pistachio Cornmeal Muffins on the schedule for Baked Sunday Mornings this week.  Why?  Because I had made them right after I got Baked Elements and loved them!  In fact, this rarely happens with baked goods, but I think I may have eaten more of them than my husband. 



I don't always like the grittiness of cornmeal, but I think it works really well in these muffins with the combination of ground-up pistachios in the muffins and the larger chunks of nuts on top.

Your muffins that great. Love the pics of them. I'm so glad I tried them. I love lemons and adding that to cornmeal just really worked!
I made them twice and shared with friends to get the word out about how good these muffins are! :o)

I don't do pistachios, but the combination of the lemon and cornmeal sounds fantastic! Gotta love when a recipe comes up in the rotation and you've already made it :)

Congrats to the 49ers for their win tonight! I'll definitely be cheering for you guys when you play the Ravens!

I agree, the cornmeal-ground pistachio mixture was a nice surprise...it works really well. Your muffins are very pretty and I also agree, they are hard to resist.

I enjoy the texture of cornmeal. This sounds like a fun twist on a cornmeal muffin.
