TWD: Strawberry Rhubarb Double Crisp


I never got around to making an official announcement on my blog, but Josh and I got engaged last summer (he proposed after I ran my first, and so far only, marathon on the 4th of July) and we’re getting married – in a month! We haven’t gone on any kind of crazy wedding diet or been Shedding for the Wedding (admittedly there have been a few extra miles run by Josh and I’ve tried to pick up hand weights occasionally). So even though I haven’t been blogging much, I’ve still been baking and we’ve been eating plenty of treats – in moderation, of course. However, Josh told me that the two weeks prior to the wedding, he wants to put a moratorium on desserts. I asked if that meant I could not bake at all (you know, with all the free time this procrastinator will have the two weeks before her wedding), and he said that I could make snacks, like cookies, but he is planning on refraining from large desserts with ice cream.



So it’s a really good thing this week’s Tuesdays With Dorie selection, Strawberry Rhubarb Double Crisp was selected now. It had been a while since I’d made an oozy fruit dessert, which, at least in our house, just screams for homemade ice cream. It seems that it is slightly early for rhubarb, though I was fortunate enough to find some at my local market. For some reason, I felt that this dessert took longer to put together than your average crumble (though I was multitasking with some other recipes), but double crisp is double delicious, so it’s definitely worth it!

Congratulations Margot! How exciting. A moratorium on desserts? I cracked up when I read your procrastinator comment...I know exactly what you mean. But think of this way...if you are deprived of sweet treats your wedding cake will taste extra yummy!

Your crisp looks delicious. Glad you were able to get this treat in before the cutoff. :) I've been salivating over all the TWD posts today. I'm itching to get in the kitchen and whip up some strawberry goodness.

P.S. You must share what kind of cake you are having to celebrate the big day!

How exciting! I hope you do a wedding post and we get to see some great photos. Josh, Josh, Josh, maybe minis??? Tiny little ones? No dessert at all? Everyone will be testy by the time of the wedding from lack of sweetness! Just kidding. Congratulations to you both! Oh, and your crisp looks marvelous!

Congrats on your upcoming wedding! I think you should bake lots before the wedding to help relieve stress.

Your crisp looks great. I used frozen rhubarb and I'm glad I did because I loved the tart/sweet/gingery combination of this recipe.

Well, very belated congratulations on your engagement Margot!! So happy for you :) I echo Kayte's comment about a wedding post, we'd all love to see photos. Good luck with the last month of planning/getting ready. I can absolutely relate on the procrastinator comment...

Your crisp looks wonderful and I completely agree that crisp without ice cream is just not the same. Given Josh's love of ice cream I'm surprised he's cutting it out!

How exciting! Congratulations! I'll miss your bowls of dessert with a big scoop of ice cream, but hopefully you'll be back in the swing of that after the wedding. I would love to see a post about the wedding, and the cake, and the honeymoon!

I haven't had rhubarb since I was a little kid. Cannot find it here in the deep south anywhere. Ah well. LOOKS delish.
