TWD: My (Dorie's) Best Chocolate Chip Cookies


Tuesdays With Dorie has its second classic in a row, this week it’s: My (Dorie’s) Best Chocolate Chip Cookies. Even though the recipes are posted well ahead of time, I pretty much never end up baking the TWD recipe until the Saturday or Sunday before (or occasionally the Monday or Tuesday of) the posting date. However, one night at the end of January, Josh asked if we had any cookie dough in the freezer and we didn’t. Actually, it’s possible somewhere in the very back there might be a tiny stump left, since we are not always great about frozen baked goods. Anyway, of course the one time I bake ahead of schedule, I didn’t manage to take any pictures, so I had to make them again. This wasn’t a huge sacrifice since chocolate chip cookies are quite easy to make and Josh had declared Dorie’s cookies his new favorite, or a close second to the Ad Hoc at Home Chocolate Chips Cookies. But here’s the thing: I’m really beginning to think his “favorite” cookie is whatever I have just handed him straight out of the oven and he’s eating when I ask. I even sometimes try to remind him how much he liked previous treats, based on prior Deliciousness ratings. I decided the best way to figure out what Josh’s actual favorite cookie is was to put several kinds of cookies head-to-head in a blind tasting for him.



Unfortunately, since it’s late on Tuesday night and Josh actually needs to use the computer for work, I’m going to have to keep this post short and post the taste-off results later this week. Definitely before next Tuesday. A lot of bakers reported that Dorie’s chocolate chip cookies were incredibly thin and crispy. Mine were thin, but nice and chewy. Since Josh has an extreme preference for chewy cookies, I generally take them out a little earlier than the recipe specifies and this was no exception. In her description, Dorie presents them as being of the Tollhouse kin, and they do have that classic chocolate chip cookie taste. The first time I made them, I used pre-cut chocolate chunks, then this time I cut up a Valhrona bar and I love how the uneven little bits spread throughout the entire cookies.

  2. I can't wait to hear about the results of the tasting! I love that photo of the different cookies stacked up on the plate. Your TWD cookies look wonderful - definitely much more appetizing than the thin, crispy ones I wound up with. I'm glad Josh enjoyed them so much. Have I mentioned how jealous I am of his metabolism?? :)

  4. That is so awesome . . a CCC blind fold tasting! Genius actually. I think it's going to give me an idea for my next themed party!

  5. can't wait to hear about the taste test results! yours are much thicker than mine... i didn't even photograph my CCC cookies b/c they were so flat! (but i did get some of a variation!)

  6. Looking forward to the taste off results! Mine baked up flat, but they weren't crispy, definitely chewy. Loved the flavor, just don't like flat cookies :-/

  7. Your cookies look wonderful! I'm very excited to hear about the CCCs that you compared and what the results were! CCCs are probably my favorite baked good ever. The NYT is my current favorite, but I have the CI version cooling on the rack right now, and they look mighty tasty...

  11. Thank God Josh managed to hold it together and not go over the top with that cake pop!

    I can attest to how delicious all of your cookies were since I just tore into my Secret Baker package. I was so tickled to have a private taste off in the South Bay, but it's the cheese crackers I can't keep my hands off of. The olive oil pound cake is subtly delicious and will make a great breakfast toast. Not to worry, the cookies will get their fair share of attention as I plan to make an ice cream sandwich with some leftover caramel ice cream, but deciding which of the cookies to have has been the obstacle. You are the best Secret Baker!

  17. Okay, I didn't know actual people made morning buns. I thought they were the product of bakery magic. I love your idea of the taste test. Will Josh be the only judge? Will there be a canine judge too? Dave Barry wrote a very funny essay on a taste test he administered to his dogs. I'll try to find it for you.

    @Jo Ann: Josh was the only taster, though I've had nibbles of all the cookies. It would have been fun to do a tasting for a group.
