TWD: Citrus Currant Sunshine Muffins
This week Tuesdays With Dorie made Citrus Currant Sunshine Muffins – an absolutely perfect choice for this time of year. Spring (and the fruits that accompany it) aren’t quite here and these bright muffins are a nice reminder that it’s on its way. My muffins are a little darker since, per Nancy’s suggestion on the Problems & Question site, I used half whole wheat flour. I didn’t have any lemon extract, so I added some zest instead, which I think worked fine (I wasn’t going to buy a bottle of lemon extract to use a ¼ teaspoon). I thought these muffins had the perfect amount of sweetness for a breakfast treat and would happily make them again.
This recipe rated an 8 for Deliciousness and a 2 for Effort, for an EDR of 4. Many thanks to Lauryn of Bella Baker for a splendid selection. Margot, your muffins look wonderful! Love your plate, too! I bet this was a good one to make with whole wheat flour. Sounds like a really good flavor combo!

They look great, especially on the colorful plate! I wouldn't have bought lemon extract either. I was surprised to find a bottle of it in my pantry!

Great idea on mixing in some WW flour. They look wonderful! I love currants but have a hard time finding them here. I just made Good Morning muffins last night from the book "Flour" which uses Wheat Bran. I love wheat bran because it gives you the nutrients you wants w/o being heavy. I loved those muffins. Not too sweet!

Anytime you get an 8 on deliciousness, it has to be a good thing, right? They look wonderful. Nice job working that wwflour in there!
